Sweet Cottage Cheese
Oil (for frying)
Mix the cheese, well drained of whey, with the sugar, eggs, baking soda, salt. Incorporate the flour and knead lightly until you get a soft dough that does not stick to your hands.
Let the dough rest for about 15-20 minutes.
Divide the dough into suitable portions and shape the papanas in the palm or on the worktop. With the thumb we form their specific hole and then we make the corresponding ball. Do not make the papanas too big because when they are fried they will grow / swell a lot.
Heat oil in a saucepan and start frying the papanas and balls, on both sides for a few minutes, until they turn brown and get a nice color.
After frying them all, follow the part where you decorate them with cream and jam in the amount you want, and dig in!
