The cabbage is salted in cold water depending on how salty it is. It can be put from evening to morning or just an hour.
Pass the meat and onion through the mincer, then mix with the rice, salt, pepper and half the amount of carrots passed through the grater.
Peel each cabbage leaf and cut it if it is too large. Put the stuffing like a walnut and roll by placing the sarmales in the pan on a layer of chopped cabbage and alternately with the smoked pork breast.
Put in the pan the remaining carrots, also passed through a grater, place the thyme, peppercorns and bay leaves. Pour cabbage juice, broth and enough water to cover them. Boil covered for about 3 hours.
